Guilt-free blondies? Heck yeah! Well, in reality, no treat should be associated with guilt, BUT these are nourishing enough to be breakfast, not a lie about it. This is my very own recipe for Peanut Butter Blondies that are 100% vegan-friendly and grain-free. The perfect bite of soft, chewy goodness with protein and fiber to boot!
I don’t understand folks who engage in the whole brownies versus blondies debate. Brownies are definitely a childhood staple. They have a deep chocolate flavor and chewiness that’s hard to replicate, and we can’t deny that the nostalgia factor plays a big role too. We practically grew up on them!
But blondies are awesome in their own right. Who doesn’t love all of that rich, sweet vanilla flavor? And they’re almost always chewy and fudgy. It’s a dessert that’s hard to screw up!
The best part? Blondies are SUPER flexible. You can flavor the dough a ton of different ways, like how my blondie recipe calls for peanut butter, and you can throw in pretty much anything into the batter! I personally add ripe bananas and a variety of mixed nuts into mine and they come out pretty good.

Peanut Butter Blondies – Grain Free + Vegan

Ingredients
- 1/2 cup almond flour (60g)
- 1/4 cup coconut flour (30g)
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp sea salt
- 2 large ripe bananas
- 1/3 cup peanut butter (80g), plus 2 Tbsp for topping
- 1/4 cup maple syrup (60ml)
- 1/2 cup non-dairy milk (120ml)
- 2 Tbsp coconut oil, melted
- 1 tsp vanilla extract
- 1/2 cup chopped mixed nuts (60g)
- 1/3 cup chopped chocolate (70g)
Instructions
- Preheat oven to 350F/176C.
- Prepare a square baking pan (9×9) with coconut oil.
- In a medium bowl, sift flours, baking soda, baking powder and salt.
- In a blender, combine bananas, peanut butter, maple syrup, milk melted oil and vanilla, blend until smooth.
- Add wet ingredient to dry, mixing until combined. Add nuts and chocolate, stir until evenly distributed.
- Pour into square pan, drizzle with extra 2 Tbsp peanut butter.
- Bake 25-30 minutes, or until golden brown and fully cooked.
