Hearts of Palm Vegan Smoked Whitefish Salad

Ingredients
- 1 can jackfruit in brine, drained
- 1 can hearts of palm, whole, drained
- ¼ cup celery, finely chopped
- 2 tbsp red onion, finely chopped
- ¼ cup vegan mayo
- 1 tsp dijon mustard
- 1 ½ tsp liquid smoke
- ½ tsp lemon zest
- 2 tbsp fresh dill
- Pepper, to taste
Preparation:
- Combine the jackfruit and hearts of palm in a large bowl. Using 2 forks, shred the jackfruit and hearts of palm until it resembles pulled meat or flaky fish.
- Add the celery, red onion, mayo, dijon mustard, liquid smoke and lemon zest.
- Mix to combine. Add the dill and pepper, to taste.
- Enoy!
