Cacio e Pepe Kugel

Serves: 6-8
- 3 large eggs, whisked
- 3 cups parmesan cheese, divided
- 1 tbsp black pepper
- 1 tsp lemon zest
- 3 tbsp olive oil
- 12oz egg noodles, cooked to al dente, about 7 minutes
Preparation:
- Preheat the oven to 350F. Generously grease a 9×13 baking pan.
- Pour cooked noodles into a large bowl.
- In a medium bowl, combine the eggs, 2 cups cheese, black pepper, and lemon zest.
- Pour the egg mixture over the noodles.
- Transfer to the baking pan. Top with remaining cheese.
- Bake for 40-50 minutes, or until set, and the top is golden.
- Slice & enjoy!
