Gluten Free Cardamom Pistachio Loaf

I love sending my husband nutritious snacks to work – not only does it mean that he won’t tuck into the candy jar, it means that he knows I’m thinking of him. His new favourite bake? This Gluten Free Pistachio Loaf. This loaf is full of cardamom flavour with nutty pistachios and a hint of banana.

Gluten Free Cardamom Pistachio Loaf

Cardamom is one of my favourite spices. It takes me back to cardamom buns in Scandinavia, and to richly aromatic treats in the Moroccan sun. It’s a spice that is largely underused, but it is time this underdog got more attention.

This loaf uses Teff flour. Teff flour may be difficult to find, but I promise you this, it is worth the effort! Teff is a teeny tiny ancient grain that originates from Ethiopia. While it may be small, it is mighty, packing a TON of fibre, protein and iron. Teff grains can be found in specialty food store, or my favourite, The Lovegrass.

The Lovegrass is a family-owned small business that aims to support teff farmers in Ethiopia to have a more sustainable income, while preserving the farming practices that make Ethiopian grown teff superior to teff grown in Europe or North America. Teff is one of my new favourite grains. It is a gluten-free grain, so I’ve added a touch of psyllium fibre to help it retain its moisture and bounce.

Gluten Free Pistachio Cardamom Loaf

Cook Time: 30-40 mins
Servings: 12

This gluten free loaf is subtly sweet and full of spice! Psyllium husk helps to keep it moist and springy – make this one ASAP!

Ingredients
Dry

  • ¾ cup teff flour (100 g)
  • ½ cup almond flour (50 g)
  • ¼ cup pistachios, ground into a flour, plus additional for topping (35 g)
  • ¼ teaspoon cardamom
  • ½ teaspoon cinnamon
  • ¾ tsp baking powder
  • ½ teaspoon baking powder
  • 2 teaspoon psyllium husk
  • Pinch sea salt

 

Wet

  • 2 large eggs
  • 1/2 cup plant based milk (120ml)
  • 1/4 cup maple syrup (60ml)
  • 2 tablespoons olive oil
  • 1 teaspoon vanilla extract
  • 1 banana mashed

 

Instructions

  1. Preheat oven to 200C (400F). Grease and line a loaf pan with baking paper.
  2. In a medium bowl, sift all dry ingredients.
  3. In a small bowl, whisk eggs, milk, maple syrup, olive oil, vanilla and banana.
  4. Add wet mixture to dry, stir until combined.
  5. Transfer batter to loaf pan.
  6. Top with additional pistachios.
  7. Bake for 25-30 minutes, or until a toothpick comes out clean.
