Date Tahini Cottage Cheese Ice Cream

Serves: 4
- 2 cups cottage cheese
- ¼ cup date syrup
- 2 tablespoons tahini
- ¼ cup shelled pistachios
- 1 teaspoon vanilla extract
- Pinch cardamom
Preparation:
- Combine the cottage cheese, date syrup, tahini, pistachios, vanilla, and cardamom in a blender or food processor until creamy.
- Transfer to a 9×5-inch loaf pan, and cover with plastic wrap. You can also drizzle additional date syrup on top for a swirled effect.
- Freeze for at least 4 hours, or until completely frozen.
- Scoop, and enjoy!
