Fresh, sweet figs pair perfectly with aromatic, crunchy fennel and spicy rocket. Drizzle it with a bit of zippy dressing and crushed pistachios for a salad that looks impressive, but secretly took you all of 3 minutes to whip up. Oh, and you’ll want to double, triple, or quadruple this dressing to enjoy for weeks on end. Trust me, it’s that good, and that simple.

Fig + Fennel Salad

Ingredients
- 140 grams rocket (5 oz)
- 4 figs, cut into eighths
- 2 bulbs fennel, thinly sliced
- 30 grams pistachios, chopped (1/4 cup)
- 3 tablespoons olive oil
- 2 tablespoon white wine vinegar
- 1/2 teaspoon fennel seeds, crushed
- 1/2 teaspoon dijon mustard
- 1 teaspoon maple syrup
Instructions
- Combine rocket, figs and fennel in a large bowl.
- In a small bowl, whisk oil, vinegar, fennel, mustard and maple.
- Dress salad and top with pistachios
