1. Creamy Vegan Pasta
Make a rich and creamy pasta using pantry staples!
This sauce is made using tomato sauce and hummus (either homemade or store-bought!).
Cook your favorite pasta as per package instructions, and mix with tomato sauce, a spoonful of hummus, and serve with roasted vegetables (I like peppers).
Dinner on the table in 15 minutes, using ingredients that you likely have on hand!
2. Thai Green Curry
Thai Fake-away? Yes please!
Make a quick and easy thai green curry with just 5 ingredients. The secret? Jarred green curry paste.
If you have onion, garlic and or ginger, add them to a skillet over medium heat. Add the curry paste, and cook until fragrant.
Add tinned coconut milk, edamame beans, and chopped carrots, cooking until the carrots are tender. Serve with brown rice.
3. Lemon Lentil Soup
Soup is one of the simplest dishes to make, and this is no exception!
Add a chopped onion, garlic, and cumin to a pot with oil. Heat until fragrant. (optional, add carrots and celery).
Add dried red lentils (1/4 c per serving), and broth. Bring to a boil, and let simmer for 15-20 minutes.
Add lemon juice and zest, and serve with your favourite whole grain toast or pita.
4. Pumpkin Chickpea Curry
Make a tasty curry in a hurry using pantry items! Having tinned pumpkin on hand help to round out this dish, but you can also add tinned tomatoes!
Heat oil in a skillet, and add onion, garlic, and ginger, cooking for 2-3 minutes. Add curry powder.
Add a tin of coconut milk, pumpkin, and chickpea, bring to a boil, and let simmer until thickened. If you have any spinach or kale, add these right before serving. Serve with naan or brown rice.
