Have you jumped on the air fryer bandwagon? If you’re contemplating it, this may be the recipe that helps you make the decision. These tasty, umami-rich Air Fryer Mushroom Carnitas are the perfect taco filling, delicious rolled into a burrito or as a taco salad topping.
Wondering how air-fryers work? It’s something like a convection oven, that circulates very hot air, very quickly. Because you pile the food into a basket that allow air flow, there is a lot of hot air contact to crisp up your food.
If you do have an air fryer, here are a few tips for the crispiest results:
Preheat the air fryer before adding your ingredients – aka just run it for 1-2 minutes before adding the full basket
Don’t overcrowd the basket – try not to pile up all the contents, the more space, the crispier it will get.
Use just 1/2 tsp of oil for most recipes – too much, and it will just collect at the bottom of the air fryer, too little and it will get leathery instead of crispy
I use my air fryer quite often – from apple chips, potatoes, tofu nuggets, and roasted chickpeas, it’s definitely decreased how often I turn on my oven. I have a gadget that also acts as a slow cooker and pressure cooker – otherwise, I don’t typically buy single function appliances (because of space and hard earned money!). I was gifted mine, but have recommended it since. I can’t get my fries crispy any other way!
If you don’t have an air fryer, don’t worry. These can be made in the oven, it will take longer, and they won’t get as crisp, but they will be equally as delicious. The texture of these mushrooms almost mimic a pulled pork (or so I think).

Air Fryer Mushroom “Carnitas”
Total time: 30 min
Serves: 2
Ingredients
- 200 g mixed exotic mushrooms (½ lb)
- 1 teaspoon cumin
- 1 teaspoon mild chilli powder
- ½ teaspoon coriander
- ½ teaspoon smoked paprika
- ¼ teaspoon cinnamon
- 2 tablespoons olive oil
- 2 tablespoon apple cider vinegar
- 1 tablespoon maple syrup
Instructions
- Combine all ingredients in a medium bowl.
- Use your air fryer at 200C for 12 minutes, stirring halfway through

Don’t have an air fryer? Roast at 200C for 25-30 minutes.
