Apple Cider Donut Pancakes

Makes: 16 pancakes
Ingredients
- 1 ½ cups apple cider (or juice)
- 3 large eggs
- 3 tbsp vegetable oil or melted butter
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 ¾ whole wheat flour
- ¼ cup all-purpose flour
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tbsp baking powder
- 1/4 tsp baking soda
Preparation:
- In a medium bowl, whisk the apple cider, eggs, vegetable oil, vanilla, and maple syrup.
- In a separate bowl, combine flours, cinnamon, nutmeg, baking powder and sbaking soda.
- Add wet to dry mixture, stirring until just combined.
- Heat a nonstick pan over medium heat with butter or oil. Use a ¼ cup measure to portion pancakes, flipping when bubbles start to form.
