Breakfast just got a whole lot prettier! Now that I’m stocked up on long-lasting fruits and veggies (see my quarantine shopping list here), I’ve got loads of beets, turnips, carrots and squash. But that doesn’t mean I can’t get creative at breakfast time! I’ve made this simple vegan overnight oats recipe using ruby red beets to make them pretty in pink.
I love overnight oats, they make breakfast so much simpler and are a meal-prepper’s best friends!
Overnight oats are a staple in our house. Now you may be asking: what are overnight oats? Overnight oats are basically oats that soak overnight, which helps them plump up – no cooking required! Typically you eat them cold for breakfast the next morning, and they are the perfect breakfast to meal prep.
Why overnight oats?
There are so many reasons to whip up a batch of overnight oats, let me count the ways!
- No cooking required: just add all the ingredients into a container and shake!
- Meal Prep Lover’s Dream: your overnight oats will last up to 4 days in the fridge. I make a big batch Sunday night, and eat it Monday-Thursday.
- Grab and go: I make ours in a jam jars in single portions, so it’s super easy to grab and go if you’re bringing it to work or on the run.
- Hearty and filling: full of fiber, nuts, seeds, and protein, overnight oats are SUPER filling. Perfect for people who feel starving mid-morning! Note: Some people find that it take a bit of time to get used to eating your oats cold.
This prep ahead breakfast is an easy, delicious, and nutritious way to start the day – they can also be made into dozens of different flavor combinations and variations, depending what you like and have on hand! From banana bread, blueberry muffin, chocolate peanut butter, or these vanilla beetroot oats, the possibilities are endless.
I first tried beetroot muesli in New Zealand, after seeing it on instagram I ordered it as a local kiwi cafe – and it was AMAZING. The color! The flavor! The texture! It had so much going for it. Fast forward two years later, I’ve finally crossed it off my to-make list of recipes. It may sounds weird, but the earthy, sweet beetroot is seriously perfect in this recipe! You can also add in grated apple if you’re feeling sweet.

Beet Overnight Oats

Resting time: 8 hours
Serves: 2
Ingredients
- 1 medium beet, peeled and grated (1 cup)
- 1/2 cup rolled oats
- 2 tbsp chia seeds
- 1 tbsp ground ground flax
- 1 tbsp hemp seeds
- 1/2 tsp vanilla extract
- 1 cup (240ml) coconut milk
- optional:2 tbsp maple syrup
Instructions
- Combine all ingredients in a bowl, mix well.
- Cover, and let sit until thickened 2 hours or overnight.
- Enjoy with a dollop of yogurt, berries, and fruit fruit.
