We LOVE pizza. But I don’t make it at home very often because I never have the foresight to make dough. Or to defrost it. Or anything. Even as a recipe writer, I get lazy in my own kitchen. But ever since I’ve discovered the ability to make this chickpea flatbread, I can proudly present a little pizza within 20 minutes.
Now this isn’t your average pizza. It’s a flat, no-rise crust made of chickpea flour. Meaning it’s a little fragile and a little dense (kind of like me…). But it comes together in no time at all, AND provides you with a source of protein and fibre… win!
Think beyond the realm of pizza toppings, and try loading on pesto, rocket and fresh figs. Or add some roasted veggies and parmesan on top for a mediterranean feast. I’ve also been known to add a touch of curry paste into the batter as well. The options are seriously endless.

Chickpea Flatbread Base
Total time: 20 min
Servings: 2
Ingredients
- 1/2 cup chickpea (gram) flour
- 3/4 cup water
- 1 clove garlic minced
- 1 tablespoon fresh herbs, chopped – or use 1 tbsp dried herbs
- 2 tablespoon olive oil plus more for cooking
- pinch sea salt + pepper
Instructions
- In a medium bowl, whisk together all ingredients.
- Let sit for 5 minutes.
- Heat a non-stick pan over medium heat. Add olive oil. Pour batter into hot pan.
- Let cook until the top is no longer wet and it is golden on the bottom. Flip and cook for another 2-3 minutes.
- Top with your favourite toppings!
