COFFEE CAKE KUGEL ☕️ A distinctly cozy, uniquely delicious combination of sweet and savory ✨

This isn’t your bubbe’s kugel – this is a blend of your favorite afternoon coffee cake and buttery noodles cooked into the slightly sweet dish that is perfect any time of day!

 

 

What’s kugel, you ask? Do you mean, besides a delicious side dish? Kugel (קוגל) is a type of pudding that is often sweet and served as a dessert. Kind of like a pie, but also not really.

In Hebrew it means “something rolled”, probably from the round jelly roll shape of some varieties. In Yiddish, it is called Galuska and Germknödel. There are many ways to make kugel, but potatoes are often the main star. Most kugel recipes contain eggs, milk, onions and other seasonings. No potatoes in this one though!

TLDR; Kugel is delicious Jewish baked pudding, and there’s no reason why it shouldn’t be a part of your menu plan.

Coffee Cake Kugel

Ingredients

  • 1lb egg noodles, cooked al dente
  • 6 large eggs
  • 2 cups whole milk lactose free yogurt or Greek Yogurt
  • 1 tbsp vanilla
  • ½ tsp almond extract
  • 1 tsp cinnamon
  • ½ cup coconut sugar
  • Crumble topping
  • 1/3 cup coconut sugar
  • ¼ cup flour
  • ½ cup instant oats
  • 1 teaspoon ground cinnamon
  • ¼ tsp nutmeg
  • 6 tablespoons unsalted butter, softened

 

Preparation:

  1. Preheat the oven to 350F. Grease a 9×13 baking pan.
  2. Combine eggs, yogurt, vanilla, almond extract, cinnamon and coconut sugar in a large bowl. Add the cooked noodles.
  3. Transfer the noodles to the baking dish.
  4. In a medium bowl, combine crumble ingredients, mixing with your fingers until the butter is incorporated and the size of small pebbles.
  5. Spread the crumble topping on the kugel.
  6. Bake for 45-50 minutes or until set.
  7. Let cool for 45-60 minutes.
  8. Slice, and enjoy!
