Cookie Dough Balls

This is one recipe I keep making. When you write recipes for a living, you often find that you can’t go back and re-make past keepers. You’re always trying to eat the recipes that went wrong, and the random assortment of food in the fridge. But this recipe is a fan favourite. My sister makes them weekly, we even ate them on her wedding day. These cookie dough balls are not your generic energy ball.

First off, these dough balls don’t require any special equipment, no food processor needed. That’s right, you don’t have to try and clean sticky dates off your food processor blades. Yay! These date-free energy balls are so insanely easy to make, and are relatively mess free.

Switch up the nut butters and sweeteners. Peanut butter + honey? no problem. Cashew butter + maple? Sign me up. These will keep in the fridge for up to five days (workweek goals!), or pop them in the freezer and grab one in the morning, to thaw by afternoon snack time.

Oh, and don’t forget to double the recipe. It’ll take only a few minutes more, and means you’ll only have to do dishes once!

Cookie Dough Balls

Time: 10 minutes

Makes: 10

Ingredients

  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • ¼ cup liquid sweetener (honey, maple syrup, or even inulin syrup)
  • ⅓ cup almond or cashew butter
  • 1 -2 tbsp non-dairy milk
  • 2 scoops vanilla protein powder
  • ¼ tsp vanilla
  • Pinch Sea Salt
  • 1/4 cup dark chocolate, chopped

 

Instructions

  1. In a medium bowl, whisk flours until combined.
  2. Add remaining ingredients, mixing until incorporated.
  3. Roll into 10 balls.
  4. Refrigerate.
