Every month I wait for the Trader Joes Frequent Flyer to come out. I LOVE seeing the new products on the store shelves, and having gone 28 years without a Trader Joes, it’s still a pretty deal to be in the vicinity of one. Recently, they came out with a “cauliflower egg thin” that was basically a cauliflower flatbread. Not only were they impossible to locate on the store shelves, but they had dairy on the ingredient list. For a lactose intolerant gal, it was a no-go.

Now don’t get me wrong. I love bread. I love toast. I love carbs. But sometimes, I want something a little lighter. Sometimes I want a bit of a change. And sometimes I still want a slice of sourdough on the side. That is where these come in.

This recipe uses riced cauliflower (in the fresh or frozen aisle – I used frozen), almond flour, eggs, flax seeds and sea salt. That’s it. Feel free us spice it up with different spices, herbs, or cheese (if dairy is your friend).

Copycat Cauliflower Egg Thins

Ingredients

  • 1 cup riced cauliflower
  • 1/2 cup almond flour
  • 2 tsp flaxseeds, ground
  • 2 large eggs
  • Sea salt

 

Instructions

  1. Preheat the oven to 350F. Line a tray with baking paper.
  2. In a medium bowl, combine all ingredients. Using a 1/4 cup measure, dollop 4-5 mounds onto the baking tray. Use the back of the measuring cup to flatten in a circle.
  3. Bake for 10 minutes, flip them over, and bake for an additional 4-6 minutes.
  4. Let cool, and top with your favorite toppings.
  5. Enjoy!
