I love Quest’s Peanut Butter Cups.
Love them.
They’re high in protein, low-carb, and gluten-free, which makes them 100% better than those other peanut butter cups in the market in my book.
But let’s be honest, even though they’re a “healthier” treat, they’re still storebought candy. Mass-produced storebought candy.
So what’s a peanut butter cup-obsessed nutritionis -slash- chef going to do? Attempt to make my own of course! Don’t tell Quest, but I came up with a copycat recipe of their classic Peanut Butter Cups… using only 5 ingredients and a birthday-day worthy twist because… SPRINKLES.
And it is super freakin’ easy. Being patient while waiting for the chocolate to harden’s probably the hardest part.
We’re using dark chocolate for these PB Cups, making them even more decadent and delicious. It’s the only sweetener in this recipe too, making it much lower in sugar. And since we’re adding a few scoops of plant-based protein powder, this snack doubles as a post-workout treat too.

Copycat Quest Birthday Cake Peanut Butter Cups

Ingredients
- ½ cup cashew butter, natural
- 3 scoops plant-based protein powder, vanilla
- 1 tsp almond extract
- 16oz dark chocolate, melted (about 2 ½ cups chocolate chips)
- Optional: rainbow sprinkles
Preparation:
- Line a muffin tray with paper or silicone liners.
- In a medium bowl combine cashew butter, protein powder, and almond extract until smooth. Roll into 12 balls, and flatten into discs.
- Add 1 scant tablespoon of melted chocolate to each muffin liner. Top with a cashew butter disc, and press down lightly.
- Top with an additional scant tbsp chocolate. Top with sprinkles.
- Refrigerate until chocolate hardens.
- Enjoy!
