Coronation Salad was something completely new to me when I moved to the UK. It is traditionally a chickpea, mayo and/or yogurt salad made with curry powder and raisins. Needless to say, I wasn’t convinced. But, as I love curry everything, and eat chickpeas like they are going out of style, I’ve veganised the traditional tea sandwich filling for a hearty, spicy and filling salad! In this recipe, feel free to use whatever yogurt or alternative you have on hand. I love coconut yogurt, as it pairs perfectly with the chickpea and curry flavour. But if you are a dairy eater, go ahead and try it with greek yogurt, Skyr, or Quark for an extra bit of protein!
Coronation salad is a staple in a typical afternoon tea sandwich , but this is not your typical salad. And I am not your typical afternoon tea eater. If you know me at all, you know I’m not a sandwich lover. In fact, I can’t stand them. I try my best to avoid them. It’s not that I don’t want the bread – no sir, that’s not the case at all! It’s that I hate that the filling is trapped inside. I am crazy, I am well aware. I’m one to eat two slices of bread on the side of a pile of fillings instead of having them smushed in between two breads, dying to get out. But, I do reckon that this would make a killer sandwich or wrap (if that’s your thing), and I enjoyed it thoroughly in a little lettuce wrap – with bread on the side.

Coronation Chickpea Salad
Total time: 5 minutes
Ingredients
- ¼ cup quark, greek yogurt, or coconut yogurt (60ml)
- 1 tbsp olive oil
- Juice of 1 lime
- Zest of 1 lime
- 1 teaspoon curry powder
- ½ teaspoon curry paste
- ¼ tsp ground coriander
- ¼ tsp garlic powder
- 1, 400g can chickpeas, drained
- 2 tbsp spring onions, chopped
- 2 tbsp pistachios, chopped
- 2 tbsp coconut flakes
- 1 mandarain orange, peeled and chopped
Instructions
- Combine yogurt, olive oil, lime juice & zest, curry powder, curry paste, coriander, and garlic powder in a bowl.
- In another bowl, add chickpeas, spring onion, pistachios, coconut flakes, and orange pieces.
- Pour dressing over chickpea mixture, stirring to combine.
- Enjoy in sandwiches, wraps, or lettuce wraps!
