Cucumber Dill Salad- It’s a flavor match made in heaven!
My Zaida, Arnold, was known for making 4 things: fresh orange juice, rootbeer floats, rye and ginger, and “zaida’s pickles”, which I recreated for the perfect summertime salad. Fresh, crisp cucumbers are combined with dill, red onion, and a sweet and tangy vinaigrette to create this healthy salad that makes the perfect side dish. My take on my Zaida’s classic “pickles” recipe.
Cucumber and dill are a far too underused combination. The freshness of cucumber pairs incredibly well with the fragrant dill, but the pairing gets lost in heavier dishes or soups. There’s something almost refreshing about this salad, especially on warm days.
This salad is light and refreshing but packed with flavor. The cucumbers are crisp, the dill is fresh and the vinaigrette gives it just the right amount of zing. It’s perfect alongside sandwiches or grilled goodies, or on its own with a slice of crusty bread.

Cucumber Dill Salad

Ingredients
- 1 english cucumber, sliced
- ¼ cup dill, fresh
- 2 green onions, sliced
- 1 tbsp olive oil
- ¼ cup white vinegar
- 1 tsp sugar
- ¼ tsp sea salt
Preparation:
- Combine all ingredients in a bowl.
- Let sit for 10 minutes.
- Enjoy!
