I always have a can of chickpeas in my cupboard. If you don’t see at least one can, you’ll know something’s up. A can of chickpeas is cheap, nutritious, and lasts forever, making chickpeas my ultimate pantry staple. You can make some pretty delicious things with the humble bean, like this Curried Chickpea Stuffed Sweet Potato. It’s more of a Caribbean-style curry than an Indian one, and it make an easy lunch for your work week.
Here’s why I love canned chickpeas:
1. Canned chickpeas are super nutritious
They are a source of both protein and fibre, which help to keep you feeling full, help to manage blood sugars, and can help with weight management.
2. They are inexpensive
Sure, dried chickpeas are cheaper, BUT if you’re less likely to prepare them, you might not get the benefit of the $$ savings.
3. It’s better for the environment
Making small changes can make a big impact. Switching up 1-2 animal proteins for plant based can make a positive change for the planet!
4. They are versatile as heck

Curried Chickpea Stuffed Sweet Potato

Total time: 45 minutes
Serves: 2-3
Ingredients
- 2-3 small sweet potatoes
- 1 tsp coconut oil
- 1/2 white onion, chopped
- 2 cloves garlic, chopped
- 1 tbsp ginger, chopped
- 1 tbsp curry powder
- 1 carrot, chopped
- 1, 15oz tin chickpeas, drained
- 1 cup (240ml) canned coconut milk
- Greens, to serve
Preparation
- Pierce and bake sweet potatoes at 220C/425F for 40-50 minutes.
- Meanwhile, heat oil in a skillet over medium heat. Add onion, garlic and ginger, cooking for 2-3 minutes.
- Add curry powder, carrots, and chickpeas. Cook for 2-3 minutes or until fragrant.
- Add coconut milk. Bring to a boil, and let simmer for 10-12 minutes, or until carrots are tender.
- Spoon curry into sweet potatoes, and serve with greens
