The word romesco is a noun that refers to both the sauce and the pepper in it. The actual peppers are called “picuals” in Spain but for this recipe, I’ll be using fire-roasted red peppers! It has a smooth, rich, smoky flavor that goes great on meats, fish, and vegetables. I love it so much that I always keep the ingredients for this recipe on hand so I can make it anytime I want to.
This dip is delicious as it is, but can also be adjusted or modified to fit your taste. It’s great to have on hand if you are entertaining or just whipping up a nice dinner for the family. This Easy Romesco Dip recipe makes enough for 8-10 people, depending on how much they like to dip.

Easy Romesco Dip

Ingredients
- 1, 16oz jar fire roasted red peppers, drained
- 1 ½ cups toasted walnuts
- Juice of 1 lemon
- 1 tbsp sumac
- 2 cloves garlic
- 2-4 tbsp olive oil
- 1 tbsp gochujang paste
