Everything Bagel Hamantaschen

Purim is just around the corner, and I’m celebrating with my all-time favorite Jewish cookie, the hamantaschen. These triangular cookies are meant to represent the three-cornered hat of Haman. This isn’t your Bubbe’s traditional prune or poppy filled treat, instead, I’m having cookies for breakfast with this savory hamantaschen full of bagel flavor. Make this recipe for Everything Bagel Hamantaschen!

 

You may be wondering, what are hamantaschen? Hamantaschen are a type of cookie eaten during the Jewish holiday of Purim. Of all the holidays, Purim is the biggest party of all, and related to Queen Esther. Hamantaschen are symbolic of Haman (the bad guy) who wore a three pointed hat. Simple as that.

Usually Hamantaschen are filled with a prune or poppy seed filling… but

Everything Bagel Spice Hamantaschen

Ingredients

Dough:

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 2 tbsp everything bagel spice seasoning
  • 1 stick (1/2 cup) butter, cubed
  • 1 large egg, whisked
  • 4-5 tablespoons water, ice cold

 

Filling:

  • 2 tbsp fresh chives, chopped
  • 3/4 cup cream cheese

 

To assemble:

  • ¼ cup everything bagel spice seasoning
  • 1 egg yolk, whisked
  • 1 tbsp water

 

Preparation:

  1. In a food processor, combine flours, baking powder, and bagel spice.
  2.  Cut in butter until it resembles a coarse meal.
  3. Stream in the egg and add water 1 tbsp at a time until a dough forms.
  4. Cover with plastic wrap and let sit for 1 hour.
  5.  Meanwhile, preheat the oven to 375F. Line 2 trays with parchment paper.
  6. In a medium bowl, combine chives and cream cheese.
  7. On a floured surface, roll dough to ¼ inch thickness. Cut 3inch circles, and transfer to the lined baking trays. Portion ½ tbsp in the center of each circle. Brush the outer edges with egg wash.
  8. Fold or pinch into a triangle shape.
  9. Brush the tops with egg wash, and sprinkle with everything bagel spice.
  10. Bake for 13-15 minutes. Let cool on the tray.
  11. Enjoy!

 

Instructions

  1. Melt the coconut oil in a large pot over medium-high heat.
  2. Add onions and sweet potato, cooking until the onions begin to soften, about 4-5minutes.
  3. Add garlic, ginger, paprika, coriander, cinnamon, cumin and red chilli flakes. Cook until fragrant, stirring frequently, about 4-6 minutes.
  4. Add pumpkin puree and vegetable broth. Bring to a boil, reduce to a simmer, and cook for 20-25 minutes, or until the sweet potatoes are soft.
  5. Transfer to a blender (or use an immersion blender), and blend until smooth.
  6. Add coconut milk and lime juice before serving.
  7. Enjoy!
