Flourless Peanut Butter Banana Muffins

These flourless peanut butter banana muffins are the perfect on-the-go snack! Let’s face it, snacking can be stressful, prepping can be stressful, and finding something that the whole family will eat can be stressful. Not to mention the hassle of dirty dishes and time it takes to get something on the table. Now I’m feeling stressed! We’ve been living with the COVID-19 pandemic now, and life seems extra stressful. We recently moved countries, so I was in the midst of trying to stock up a basic pantry when that turned into stocking up in the event of isolation. Stressful times call for stress-free baking.

 

This recipe is one that I keep coming back to. I make a big batch and pop them in the freezer for an easy snack that I don’t have to think about.

These little muffins are hella cute and are made in a jif using ingredients you likely have in the pantry, making them an easy distraction from the real world. They’re filling enough to keep you satisfied, but tasty enough to make all your troubles disappear. I may be known to throw in a couple handfuls of chocolate chips when life gets me down. I like the added crunch of granola on top, but it’s totally optional. Top it with a walnut, peanuts, chocolate or keep it topless (hehe) with just your banana slice.

I’ve also been known to pop it in the microwave and put a big slab of butter on it. Because times are hard, and hard times need soft butter, in my humble opinion.

In my opinion, there is nothing more comforting than the smell of wafting banana bread. Every time I smell it, I’m transported to my mom’s kitchen where nothing ever goes wrong and all it right in the world. These muffins make me feel that way too… until they are gone, but thankfully they’re a snap to make.

My flourless peanut butter banana muffins are seriously the perfect snack. they’ve got protein, fiber, and healthy fats. No protein bars needed for this afternoon pick me up (which means you can save money and your tummy).

Flourless Peanut Butter Banana Muffins

Makes: 12

Ingredients

  • 4 ripe bananas, divided
  • 1/4 c. non-dairy milk
  • 1/4 c. maple syrup
  • 1/4 c. peanut butter
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 1 Tbsp olive oil
  • 2 eggs
  • 2 c. oats
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 c. granola or cereal

 

Instructions

  • Preheat oven to 350F/176C. Grease a muffin tin with oil.
  • Combine all ingredients into a blender, except for 1 banana and 1/4 cup granola. Blend until smooth.
  • Divide batter into muffin tin, topping each with a banana slice and 1 tsp granola
  • Bake for 25-30 minutes
