There’s no denying that brunch is the best meal of the week . Instead of heading out to a restaurant and waiting in an endless line of hungry brunch-goers, get your friends over for these protein packed waffles filled with holiday cheer.
With a mix of oats and chickpea flour, these are not only delicious but full of fibre, protein and spice. Whisk in a bowl or whizz away in a blender for brunch that takes less time to make than the line up you’re used to standing in.
Pro tip: make a double batch and freeze them for brunch-emergencies. Pop them in a toaster and lather with almond butter for the best lunchtime sandwich you’ll ever tuck into.
I love topping my waffles with everything from syrup, to fruit and yogurt. Oh, and always with questionably excessive amounts of nut butter drizzled on top.

Gluten Free Gingerbread Waffles

Cook Time: 20 minutes
Serves: 2
Ingredients
- 1/2 c (50g) oats
- 1/4 c (30g) chickpea flour
- 2 eggs
- 1 1/2 tsp baking powder
- 1 tbsp molasses treacle
- 1 1/2 tsp cinnamon
- 2 tsp ginger
- 1/4 c (60ml) plant based “milk”
- 1 tbsp (15ml) coconut oil, melted
Instructions
- Combine all ingredients in a blender until smooth.
- Use 1/3-1/2c. batter per waffle, or make into pancakes!
