Keto-friendly blintzes, anyone?
I’m sure you’ve heard a lot about blintzes. You probably even wondered what those little guys are. They’re actually sweet and cheesy stuffed crepes!
These Keto Blintzes are grain-free and filled with flavor!
Blintzes are a classic Jewish food stuffed with cheese or a fruit filling. They’re basically a Jewish crepe, or a large thin pancake with filling, snugly wrapped around fruit or cheese and roll-up like a burrito. However, blintzes in their more traditional form, often have grains, gluten, and dairy. This can make them less than ideal for those following a grain-free diet. With that in mind, I’ve created a grain-free recipe for blintzes that I’ve given a Keto twist!
If you have never had a blintz before, this Grain-free Keto Blintz recipe is your opportunity to enjoy a healthier version of the yummy classic! This recipe for grain-free blintzes has all the goodness of classic blintzes while being completely keto and dairy-free diet-friendly.

Grain-free Blintzes

Makes: 6
Ingredients

4 large eggs

¾ cup almond milk, unsweetened

¼ cup almond flour

¼ cup cassava flour
-
1 tsp vanilla extract
-
Coconut oil, or butter, to cook
Filling:

1, 8oz ricotta cheese (I used Kite Hill Almond Milk Ricotta)

1 egg yolk
-
2 tbsp monk fruit
-
1 tsp vanilla extract
-
¼ tsp almond extract
-
½ tsp lemon zest
Preparation:

In a large bowl, combine eggs, almond milk, almond flour, cassava flour, and vanilla until smooth. Let sit for 10 minutes.

Warm an 8-10 inch nonstick pan over medium low heat. Brush with coconut oil or butter.

Pour ¼ cup batter into the pan, and swirl to coat the surface evenly.

Cook the crepe until dry on the top, about 2-3 minutes. Flip, and cook for an additional 1-2 minutes. Set aside.

Repeat with all the batter.

Meanwhile, combine ricotta cheese, egg yolk monk fruit, vanilla, almond extract, and lemon.

Place approximately 2 tbsp filling in the bottom third of the crepe

Roll the bottom half to cover the filling. Fold the side towards the center of the crepe, and roll.

Heat additional butter in the pan over medium heat. Add the rolled blintzes, cooking 2-3 minutes on both sides, or until golden.

I haven’t tested it out, but you could try chickpea flour!
