This Middle Eastern salad is traditionally made with bulgur wheat and comes together quickly with the addition of lemon juice, mint leaves, tomatoes, parsley, and cucumber. The final product is light, full of flavor, and makes for a great side dish or vegetarian entree.
Healthy, hearty, and nutritious! Made with fresh parsley and mint, onions, cucumber, and tomatoes mixed in with a tangy lemon dressing made from olive oil and lemon juice, this Grain-Free Tabbouleh is a fresh twist on the classic Middle-Eastern salad.

Grain-Free Tabbouleh

Ingredients
- 3 cups parsley, chopped
- ½ cup fresh mint, chopped
- 3 green onions, chopped
- ½ cup cucumber, chopped
- 1 large tomato, chopped
- ¼ cup hemp seeds, shelled
- 2 tbsp sesame seeds
- Juice of 2 lemons
- 2 tbsp olive oil
- Salt and pepper, to taste
Preparation:
- Combine the parsley, mint, onion, cucumber and tomato in a bowl. Mixing to combine.
- Add the hemp seeds and sesame.
- Drizzle with lemon juice, olive oil, salt, and pepper.
