This soup is mighty garlicky and tangy. It’s like eating a pickle-y soup, but trust me, it’s delicious.
To save time, use pre-steamed beets instead of cooking them yourself. Both are delicious options.

Summertime Beet Kefir Soup
A cooling soup that is perfect for summer. Kefir gives this soup a creamy and tangy zip – better yet, it is lactose free and full of probiotic goodness!
Total time: 90 minutes – or less!
Serves: 4
Ingredients
- 5 raw beetroot (500g or 1 lb), or 1lb precooked beets
- 1 tablespoon olive oil
- 2 cups plain kefir, 500ml
- 1 clove garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon
- ½ english cucumber sliced
- 3 tablespoons fresh dill, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 220C/415F.
- Wrap beets and olive oil in tin foil, place on a baking tray.
- Roast for 1 hour or until soft. Let cool.
- In a large bowl, combine kefir, garlic, lemon zest and juice.
- Peel beets under cold water.
- Grate 3 beets. Set aside.
- Chop the remaining 2 beets into cubes.
- Add grated beets to kefir mixture.
- Serve with chopped beets, cucumbers and dill.
