Harissa Carrot Hummus

Makes 1 cup
Ingredients
- 4 carrots, roughly chopped
- 5 tbsp harissa seasoning, divided
- 6 tbsp olive oil
- 1 can chickpeas, drained
- ¼ cup tahini
- Juice of 2 lemons
- 2 cloves garlic
- Pinch sea salt
Preparation:
- Preheat the oven to 400F.
- Toss carrots, 3 tsp harissa, salt and 2 tbsp olive oil on a baking tray. Roast for 20-25 minutes or until tender.
- Roast 400F for 20-25 minutes
- Combine carrots, chickpeas, tahini, lemon juice, harissa, garlic and sea salt in a food processor, pulse to combine, streaming in additional oil until smooth.
- Serve with additional harissa and olive oil.
