Israeli Salad with Bagel Croutons

Ingredients
- 1 pint cherry tomatoes, halved
- 1 english cucumber, chopped
- ¼ red onion, finely chopped
- ⅔ cup parsley
- 1 tsp sumac
- 3 tbsp olive oil
- Juice of 1 lemon
- Croutons:
– 1 bagel, thinly sliced
– 2 tbsp olive oil
– 1 tbsp za’atar
– Sea salt and pepper
Preparation:
- Preheat the oven to 350F.
- Toss the bagel slices with olive oil, za’atar, salt and pepper. Spread evenly on a baking tray.
- Bake for 10-13 minutes or until crisp.
- Combine all salad ingredients in a bowl.
- Top with croutons.
