This Lemony Tahini Slaw is as vibrant and refreshing as it gets. The dressing is infused with tahini for that Middle Eastern–inspired flavor! It’s creamy and filled with flavor, but not overly heavy. The lemon cuts through and the texture stays crunchy thanks to our trusty chopped vegetables. That’s why its important to keep things fresh.

Lemon tahini is one of my favorite vinaigrettes. It offers a touch of brightness and acidity to salads, but the flavor combination of seeds and oils from the sesame is also amazing. It’s also versatile in that it can be served as an accompaniment to dinner, slathered onto sandwiches, or as a topping for a bowl of lentils.

This Lemony Tahini Slaw recipe is a delightful way to enjoy both tahini and cabbage. It isn’t anything completely new per se, yet its flavor profile is thoroughly modern.

Lemon Tahini Slaw

Serves: 6

Ingredients

Dressing:

  • ¼ cup tahini

  • 1 tsp lemon zest

  • Juice of 1 lemon

  • 2 tsp maple syrup

  • 1 tbsp nutritional yeast

  • 1 tbsp olive oil

  • ¼ cup water

  • Sea salt and pepper, to taste

Slaw:

  • 4 cups cabbage, thinly sliced

  • 2 green onions, thinly sliced

  • 1 cup parsley, chopped

  • ¼ cup sunflower seeds

Preparation:

  1. Make the dressing: combine all ingredients in a bowl, whisking until smooth. Add more water, as needed to achieve desired consistency.

  2. Combine all slaw ingredients in a large bowl, toss with dressing.

  3. Enjoy!
