What does the ordinary person do when they realize they have too many pears?
Well, I’d like to start off that ordinary people probably don’t have too many pears. Second, I don’t think there’s such a thing as having too many pears. But me? I’m far from ordinary.
Pears are always a good idea.
Maple roasted pears? An even better one.
The last time I found myself having tons (but not too many) pears, I thought of making a nice pie. Or maybe a nice tart. Everybody loves a good pear tart. But frankly I just didn’t have the time to invest in such a tedious project. Let’s face it, most of us don’t have time to whip up some elaborate dessert any day of the week.
So like any sensible person with just not enough time on their hands, I chopped those pears up and threw them into the oven. Left them to roast cut side up.
Fast forward to the morning after, my husband asked me to roast a couple more. I think this may turn into a problem…
These maple roasted pears are just simply irresistible. Mixed with maple syrup, coconut oil, and cinnamon, it offers just the right amount of sweetness you need to get through a tough day.
Top with your favorite granola and coconut yogurt for that extra shot of happiness. Enjoy!

Maple Roasted Pears
Serves 2
- Ingredients
- 2 pears, halved and cored
- 2 Tbsp maple syrup
- 1 Tbsp coconut oil, melted
- 1 tsp cinnamon
- 1 tsp ginger, chopped
- 1/4 c granola (30g)
- 1/2 c. coconut or dairy yogurt
Instructions
- Preheat oven to 375F/200C. Prepare a baking tray with parchment paper
- Combine maple syrup, coconut oil, cinnamon, and ginger
- Toss cored pears with coconut oil mixture.
- Roast cut side up for 20-25 minutes or until tender
- Place on top of coconut yogurt, and top with granola
