One Pot Vegan Pumpkin Pasta

Ingredients
- 1 tbsp olive oil
- 3 cloves garlic, chopped
- 1 cup water or vegetable broth
- 2/3 cup coconut milk, canned
- 1/3 cup white wine
- 1 tsp Dijon mustard
- 1 cup pumpkin puree
- 8oz pasta (I used rigatoni)
- ¼ cup nutritional yeast
- Salt and pepper to taste
Preparation:
- Heat oil in a medium-sized pot over medium heat.
- Add garlic, cooking 3-4 minutes or until fragrant.
- Add water, coconut milk, wine, mustard, and pumpkin. Bring to a boil.
- Once boiling, add pasta and nutritional yeast.
- Cook, covered for 6-7 minutes. Remove the lid, and cook for an additional 1-2 minutes or until pasta is cooked and the sauce has thickened.
- Season with salt and pepper.
