Orange Creamsicle Baked Oats

Ingredients
- 1/2 cup orange juice
- 1 cup non-dairy milk
- 1/4 cup ground flax
- 1/4 cup chia seeds
- 2 cups rolled oats
- 1/2 cup chopped cashews
- 1/4 cup unsweetened coconut
- 1/4 cup orange marmalade
- 1 orange, zested
- 1 tsp vanilla extract
- 1/4 c. cashew butter
- 1-2 oranges, thinly sliced
Preparation:
- Preheat oven to 350F/176C. Lightly grease a muffin tin.
- In a large bowl, combine orange juice, milk, flax, and chia seeds. Let sit for 3-5 minutes
- Add oats, cashews, coconut, marmalade, zest, vanilla, and cashew butter.
- Portion into 12 muffin cups, topped each with a thin slice of range.
- Bake 15-20 minutes, or until golden brown and fully set.
