This Peach and Tomato Salad is summer on a plate. Summertime is the best season, it’s a few months of sheer bliss where everything tastes better, I feel better (and probably look better). Produce tastes its best when it’s in season, meaning peaches and tomatoes are always in my house come late August. This isn’t your average tomato salad, while there is no ooey gooey burrata, there is crispy and sweet peaches and basil, making this a sweet and savory salad you’ll come back to. Saying that, I’ve made this with imported fruit and veggies in the winter, and it’s still pretty killer.
Backyard BBQs are probably one of my favorite parts of celebrating summer. There’s nothing better than a grill full of veggies, cobs of corn, veggie dogs, watermelon, oh and this Peach & Tomato Salad. And possibly a bit of cheeky punch.
If you’re looking to make this salad into a meal, top it with grilled tofu, fish, halloumi, and toss in some cooked pasta or chickpeas.
Peach and Tomato Salad

Ingredients
- 2 peaches, cut into 16 wedges
- 1/2 c. cherry or grape tomatoes, halved
- 2 large tomatoes (heirloom is best!)
- 1/4 c. thinly sliced red onion
- Handful fresh basil
- 2 tbsp extra virgin olive oil
- 1 tbsp white balsamic vinegar
- salt + pepper, to taste

- Combine all ingredients in a bowl – easy as that!
