Peanut Broccoli Dip

This isn’t another hummus recipe (queue applause). This is the recipe you make when you’re confused about the contents of your fridge and want to serve an appetizer… but for some reason, you keep making it over. and over. and over again. I dreamed up this gingery dip when I was looking for a new twist on hummus, and found myself without beans in the pantry. Thinking of my favourite foods (and items I had on hand), I started literally throwing things into the blender. Peanut butter, hemp oil (or use olive oil!), broccoli, and fiery ginger, it’s an asian-fusion twist for a dip-worthy dip.

 

I often get into the habit of picking up a container of hummus at the store. Until I noticed my collection of re-used containers and I was EMBARRASSED. First off, what a waste of plastic. SO MUCH PLASTIC. Someone please package your hummus in something different. And secondly, I was embarrassed because dips (like hummus) are so incredibly easy to make, and saves so much money.

You can make a dip out of whatever you have on hand – as long as you have a blender or food processor! Toss in a tin of beans or lentils, a nut or seed butter, aromatics (like ginger or garlic), and a splash of olive oil. I like a little brightness from citrus fruits, so a touch of lemon or lime will go a long way.

Instead of using a tin of beans, I used broccoli – weird swap, I know, but it totally works, and makes me think my next dip should use veg as well… carrot cashew dip anyone?!

Peanut Broccoli Dip

Looking for a spicy #GameDay dip? Step aside guacamole, there’s a new dip in town! Broccoli and peanut butter are the base for this unexpected dip, filled with ginger spice and hemp oil for a little Omega 3 boost.

Ingredients

  • 1/2 cup broccoli florets
  • 1/4 cup peanut butter
  • 2 Tbsp hemp oil, or olive oil
  • Zest of 1 Lime
  • Juice of 1 Lime
  • 1 clove garlic
  • 1 tsp fresh ginger, chopped
  • 1/4 tsp salt
  • 1 tsp sriracha sauce

 

Instructions

  • In a blender or food processor, combine all ingredients, blend until smooth. Use within 3 days.
