Plantain & Red Wine Lentil Shepherd’s Pie

Raise your hand if you ate one too many Shepherd’s Pies growing up.

 

Yup, me too. It was a bog-standard meal in my household that typically was met with “not again” from my sister and I. I used to pile up my plate into a mountain and cover it with so much ketchup you couldn’t even see the potatoes.

It’s been many years since I’ve indulged in a beef and potato pie, and I’ve given it a meatless makeover using lentils, red wine, and topped with sliced plantains. This ain’t your mama’s shepherd’s pie!

Plantains are one of my favourite starches – they taste like a mix between a potato and banana (weird, I know), but green plantains can be used in place of potatoes in many recipes. You can typically find them in an “ethnic” store (whatever that means), but no matter the aisle, they are delicious. If you can’t find them, substitute mashed sweet potatoes in this recipe for an equally delicious.

If you’ve accidentally gone off and drunk all the wine, use beer or white wine in place of the red wine… I’m not judging.

Red Wine & Lentil Shepherds Pie with Plantain

Prep Time: 30 minutes
Cook Time: 50 minutes
Serves: 6

Ingredients

  • 2 tbsp olive oil divided
  • 1 small white onion chopped
  • 1 medium carrot chopped
  • 1 stalk celery chopped
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 2 cups cooked green lentils (or tinned) 150g
  • 1 tsp rosemary
  • 1 bay leaf
  • 2/3 cup red wine (180ml)
  • 1/2 tsp soya sauce or tamari
  • 3 plantains thinly sliced, diagonally

 

Instructions

  1. Preheat oven to 170C (350F).
  2. In an oven safe pan, heat 1 tbsp oil over medium heat.
  3. 3. Add onion, garlic, carrot, and celery. Cook for 3-4 minutes, stirring occasionally.
  4. Add tomato paste, and paprika, stir and cook for an additional 3-4 minutes or until softened.
  5. Add lentils, rosemary, bay leaf, red wine and soya sauce. Bring to a boil, and let simmer for 6-8 minutes or until wine is nearly evaporated. Remove bay leaf.
  6. Arrange plantains on top of the lentil mixture. Brush plantains with remaining oil.
  7. Bake in preheated oven for 25-30 minutes or until plantains are tender.
