Pumpkin Spice Chia Pudding
Prep Time: 5 minutes
Cook Time: 30 minutes – overnight
Serves: 1
Ingredients
- 3 tbsp chia seeds
- 1/2 c (120ml) plant-based milk
- 1/4 c pumpkin puree
- 1/2 tbsp pumpkin pie spice
- 1/2 tsp maple syrup
- 1 tbsp pecans, chopped
- Optional: 1 scoop vanilla protein powder
- Optional: 1 tsp espresso powder
Instructions
- Combine all ingredients, stirring until there are no more clumps. Leave for 2-3 minutes, and stir again, removing clumps.
- Cover, and refrigerate, letting sit for at least 30 minutes.
- If you want this layered effect, don’t add pumpkin until serving.
