A Quick & Easy Mango Amba recipe that’s perfect for summer!
Amba is a pickled mango condiment of Indian origin. It’s also used widely in Israeli cuisine, as it was brought to the region via Iraqi Jews. It’s perfect lathered on top of rich dishes, like Sabich.
Mango Amba is a delicious, beneficial drink made of pure mango pulp and Indian spices. This version uses frozen mango as the base for a sauce that comes together in less than 30 minutes. It’s a sweet and tangy sauce that is a healthy way to enjoy the nutritional benefits of mangoes.

Quick & Easy Mango Amba

Makes 1 cup
Ingredients
- 1 cup frozen mango
- 2 cloves garlic
- 1/4 cup water
- 1/3 cup apple cider vinegar
- 1/2 tsp fenugreek leaves
- 1/4 tsp cumin
- 1/4 tsp sumac
- 1 tsp honey
- Pinch salt
Preparation:
- Combine mango, garlic, water, vinegar, fenugreek, cumin, sumac, honey, and salt in a food processor or blender.
- Transfer the mixture to a small saucepan.
- Over medium heat, bring the mixture to a low boil, and simmer for 10-15 minutes, or until thickened.
- Transfer to a container, and store in the fridge.
