Hot take of the day: savory chickpea crepes are SEVERELY underrated.

Everyone loves a classic sweet crepe, but what’s life if we don’t try something new every once in a while? And if it turns into a newfound addiction, then I’m counting that as double a win! Especially if it is gluten free, vegan, and protein packed. How to get all those benefits in a thin crepe? Chickpea flour!

Here’s today’s contender: my quick and easy recipe for Za’atar Chickpea Crepes!

These Savory Za’atar Chickpea Crepes are my new favorite thing to nosh on and I can give you two reasons why they’re the perfect candidate to be yours too:

  1. It has za’atar, and when has za’atar ever let you down?
  2. Chickpeas!

Crepes are the perfect treat for any special occasion. They’re also a great way to introduce your friends and family to new ingredients and flavors. I love serving crepes as an appetizer while entertaining, as a side dish at dinner, and even turn them into breakfast pancakes! And the good news is, these savory za’atar chickpea crepes are made with simple ingredients you probably already have in your kitchen.

The secret ingredient is chickpea flour. Chickpea flour is packed with protein and fiber, and helps these crepes stick together, along with ground flaxseeds, which act as a binder. If you ever wonder what to use chickpea flour for… this is it!

A savory Mediterranean delight, these chickpea crepes are breakfast on the go and make an awesome snack. They’re also ridiculously simple to make — just combine everything together, spread onto a hot pan, and voila! A fresh crepe is ready to be devoured.

Savory Za’atar Chickpea Crepes

Makes: 8

Ingredients

  • 2 cups chickpea flour
  • 1 tbsp ground flaxseeds
  • 2 tbsp za’atar seasoning
  • 1 tsp baking powder
  • ½ tsp garlic powder
  • ¼ tsp sea salt
  • 2 cups water
  • 3 tbsp olive oil
  • labneh & fresh mint, to serve

Preparation:

  1. Combine chickpea flour, flax, za’atar, baking powder, garlic, and sea salt.
  2. Whisk in water and olive oil.
  3. Let sit for 20 minutes.
  4. Heat a nonstick pan over medium-low heat.
  5. Grease liberally with oil.
  6. Add ⅓ cup batter to the pan, swirling to coat the bottom.
  7. Cook for 3-5 minutes, or until the top is no longer wet.
  8. Flip and cook for an additional 2 minutes.
  9. Spread labneh, za’atar and mint on the crepes.
  10. Enjoy!

  • 2 cups water

Instructions
 

  • Combine chickpea flour, flax, za’atar, baking powder, garlic, and sea salt.
  • Whisk in water and olive oil.
  • Let sit for 20 minutes.
  • Heat a nonstick pan over medium-low heat.
  • Grease liberally with oil.
