I love asparagus. Even as a kid asparagus was a favorite veggie on the dinner table, and we all looked forward to summer to enjoy it. In spirit of asparagus, I made this shaved asparagus salad. A bright, summery salad that is ready in no time, filled with rich pistachios, zippy lemon and grassy asparagus!
Choosing asparagus:
When choosing asparagus, choose thinner stalks. They’ll be tender, sweet, grassy and full of flavor. Large, thick asparagus can be “woody” and stringy.

But in reality, asparagus is super versatile – it can be roasted, grilled, steamed, added to stir fries, or raw.

Shaved Asparagus Salad
Prep Time: 15 mins
Serves: 2-4
Ingredients
- 1/2 lb asparagus shaved (250g)
- ¼ cup chopped parsley
- ¼ cup Shaved parmesan
- Juice of 1 lime
- Zest of 1 lime
- 2 tbsp olive oil
- Sea salt
- 2 tbsp chopped pistachios
Instructions
- Combine asparagus, parsley, and parmesan in a bowl.
- Whisk together lime juice, zest, olive oil, and salt. Pour over asparagus.
- Toss shaved asparagus with dressing, top with pistachios
