Sheet Pan Meal: Roasted Everything Chickpeas

If you’re as stick of doing dishes as I am, welcome to my pity party. And if you’re bored of your lunch-game but don’t feeling like slaving over a recipe, join the club. No more stacks of dirty dishes, instead we’re making a full meal with just a few simple steps on a sheet pan. Sheet pan meals are your new best friend, which is great, because while we are all stuck inside, we need friends.

We’re roasting baby potatoes, broccoli and chickpeas in “everything bagel spice”, the perfect recipe that’s barely a recipe. Throw the finished product in a bowl and call it a day with this sheet pan meal: roasted everything chickpeas with smashed potatoes and broccoli. It’s on the table in a flash, and quite frankly I serve it right on the sheet pan. No bowl needed in my house.

Here’s some of my top tips for SHEET PAN MEALS:

 

1. Bring on the flavor:

Sheet pan meals have NO rules. You can use any seasoning or sauce you like best. The secret? Toss your uncooked veg with oil and your favorite spices before cooking – cooking helps the spices release their flavor. Looking for a bit more? Finish it off with a sprinkle of parmesan, or a little bit of lemon or lime zest. Or, while your meal is roasting, throw together (read: open a jar of) a little pesto or peanut sauce.

2. NO MORE dishes

Sheet pan means make clean up simple – the trick? Pick up some reusable silicone non stick liners so you can reduce your parchment paper use. Using a non-stick pan or pan liner can help to make this even easier. Just watch putting your pans in the dishwasher, as it can wash away some of the non-stick coating.

But seriously 1 or 2 dishes and you’re done. SIGN ME UP.

3. Keep everything the same size

When cooking a sheet pan meal, it’s important to take the size, shape and type of food you’re cooking, you don’t want to end up with one mushy vegetable and one raw potato. That’s why I added in the extra step of boiling my potatoes so that cooking time in the oven would be quicker.

Sheet Pan Roasted Everything Chickpeas

Time: 25 minutes
Serves: 2

Ingredients

  • 1/2 lb (250g) baby potatoes
  • 1 head broccoli, cut into florets
  • 1 can chickpeas, drained
  • 2 tbsp olive oil
  • 1 tbsp everything bagel spice
  • 1 tsp granulated garlic

Preparation

  1. Preheat oven to 400F/200C. Line a baking tray with parchment paper.
  2. Add potatoes to a saucepan. Cover with water, and cook on high for 15 minutes. Drain.
  3. Meanwhile, add broccoli and chickpeas to the tray, toss with 1 tbsp olive oil.
  4. When potatoes are cool, smash them with the back of your hand or a small bowl. Add to tray.
  5. Drizzle potatoes with oil.
  6. Sprinkle seasoning and garlic powder over the broccoli, chickpeas and potatoes.
  7. Roast for 25 minutes.
  8. Enjoy!
