This recipe makes me feel like a kid again, with memories of packing a peanut butter and jam sandwich (before peanuts were outlawed and I started disliking sandwiches). This recipe for Strawberry Peanut Butter Baked Oats is a new staple in our house, they are perfect for breakfast on the run, early mornings, or hungry afternoons.
Baked oats are seriously a busy gal’s saviour. I bake them almost weekly, and take 1-2 with me when on the go. You can also make these nut-free by using a seed butter and mixed seeds instead of peanut butter and chopped nuts. Switch up the flavours with grape jelly, and top with grapes, or go crazy with marmalade – really just use up that jam jar in the fridge.
Full of fibre, healthy fat and plant protein, these little cups are sure to power you through your busy mornings, because who has the time for a hot bowl of porridge these days?

Strawberry Peanut Butter Baked Oats
Total Time: 30 mins
Makes: 12 oat cups
Ingredients
- 1/2 cup water (120ml)
- 1/4 cup ground flax
- 2 cups rolled oats
- 1/4 cup chia seeds
- 1/2 cup chopped peanuts
- 1/4 cup unsweetened coconut
- 1/4 cup strawberry jam
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 cup non-dairy milk
- 1/4 c. peanut butter
- 3-4 strawberries, sliced
Instructions
- Preheat oven to 350F/176C. Lightly grease a muffin tin.
- In a small bowl, mix flax and water. Let sit for 5 minutes.
- In a large bowl, mix oats, chia, almonds, and coconut.
- Mix jam, vanilla extract, milk, peanut butter, and flax mixture.
- Add wet to dry mixture, stir until combined.
- Divide batter into muffin tin – top with a sliced strawberry.
- Bake 15 minutes, or until golden brown and fully set.
