Sumac is a bold, slightly tart spice with a deep red color made from red berries that grow on trees, and is used widely in Eastern Mediterranean cuisines. This versatile spice is perfect for adding a little zest to just about everything. With just a little bit of this garnish, you can elevate a normal dish into something truly mouth-watering. I think strawberries are the perfect vessel for sumac’s tangy beauty. Sumac just brings a special twist to this seasonal fruit! Macerated overnight, the berries take on a subtly tart and sweet flavor and make a delicious addition to creamy cheeses, yogurt parfaits, and even cocktails. You can eat it straight or spoon it over ice cream, yogurt or pancakes too.

Sumac Macerated Strawberries

Serves: 4-6
- 2 cups strawberries, stemmed and halved
- 2 tsp sumac
- 1 tbsp white wine vinegar
- 1 tbsp honey
- Pinch salt
- ½ cup labneh
- 1 tbsp olive oil
- Fresh parsley, to serve
- Black pepper, to serve
Preparation:
- In a medium bowl, combine the strawberries, sumac, vinegar, honey, and salt, stirring to combine.
- Let sit for 10 minutes, or until the strawberries begin to break down slightly.
- Spoon on top of labneh, and drizzle with olive oil. Serve with parsley and black pepper.
