The holidays are upon us! Who else is starting to feel the holiday rush? 😵💫
Yup, once again Hanukkah has come around, and that means it’s time to scour the internet for new Hannakuh recipes and eat delicious fried potato pancakes.
There’s plenty of food during the Hannukah season but latkes probably reign supreme above everything else. Latkes are a unique type of potato pancake that originated from Jewish traditions. They are thin and crispy pancakes served in all sorts of ways- savory, sweet, sometimes with homemade apple sauce… the list goes on!
This year, Thanksgiving and Hanukkah are back to back… meaning I’m combining my fave dishes, latkes, and sweet potato casserole into one dish!
We’re all about efficiency here. Especially if that efficiency tastes crazy delicious.
This Sweet Potato Pecan Latkesrecipe might be new but each bite reminds me of Thanksgivings and Hannukahs I celebrated growing up… with good conversations, good company, and good food. I’m hoping this year’s will be the same!
Word of caution though: If you aren’t a latke lover and/or you don’t like sweet potatoes, these might not be for you. I’m crazy for both of them and just can’t get enough.

Sweet Potato Pecan Latkes

Serves 6-8
Ingredients
- 3 large sweet potatoes, peeled and grated
- 3 eggs
- ½ cup pecans, finely chopped
- 1 tbsp flour
- ½ tsp salt
- 1 tsp cinnamon
- ½ cup mini marshmallows
- Oil, for frying
Preparation:
- Line 2 baking trays with paper towels. Combine grated sweet potatoes, eggs, pecans, flour, salt, and cinnamon.
- Heat oil in a large frypan over medium-high heat, about 1 inch deep.
- To test the temperature, add a small piece of potato, if it bubbles immediately, it’s ready!
- Scoop ¼ cup of the latke mixture, stuffing with 2-3 mini marshmallows. Add to oil, and flatten slightly.
- Cook for 5-6 minutes per side, or until golden. Transfer to the lined paper towel.
- Enjoy!
