Tahini Caramel Apple Snacking Cake

Serves: 8-10

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup almond flour
  • 1 ½ teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ cup olive oil
  • 3 large eggs
  • 2/3 cup sugar
  • ½  cup non-dairy milk
  • 2 teaspoons vanilla extract
  • 2 apples, peeled and chopped into 1/2 inch pieces
  • ¼ cup Salted Tahini Caramel

Method:

  1. Preheat the oven to 350F. Line and grease an 8×8-inch baking pan.
  2. In a large bowl, whisk together the flour, almond flour, baking powder, and cinnamon.
  3. Whisk together in olive oil, eggs,  sugar, milk, and vanilla.
  4. Add the wet ingredients to the flour, and mix gently until just combined.
  5. Fold in the chopped apples, and transfer to the prepared pan. Dollop with tahini caramel, and bake for 37 to 42 minutes, or until a toothpick comes out clean.
  6. Cool in the pan, and slice.
