Skewers are a classic summer staple, and summer is BBQ season. So that means skewers are a BBQ staple, right?
But then some people (me) would argue that barbecues shouldn’t be kept to just one season, so that means BBQs and skewers shouldn’t just be a summer staple and can be eaten all year round right?
Right???
I’m honestly just looking for an excuse to make these tofu pineapple skewers anytime I want to because they’re so good. Easy, light, and healthy, yet still super flavorful and satisfying. Yummy in my tummy, and something my whole family loves.
I’m a big fan of pineapple by itself. Again, a definite summer staple. Pineapple is even more delicious when cooked, the sugars caramelize and it helps to keep these skewers juicy and feeling tropical! They taste amazing sandwiched between the marinated tofu and red onions. Cook them juuuuust right and you’ll get an amazing sweet and savory flavor combo.

Tofu Pineapple Skewers
Total time: 45 minutes
Serves: 4-5
Ingredients
- 1, 300g block tofu cut, into 1 inch cubes
- 1 pineapple, cut into 12-16 cubes
- 1 large red onion, cut into wedges
- Marinade
- 1/4 cup olive oil (60ml)
- ¼ cup orange juice (60ml)
- Juice 1 lime
- 1 lime zested
- 1 tsp grated ginger
- ¼ tsp salt
Instructions
- Make the marinade: In a bowl, combine all ingredients. Toss tofu in marinade. Cover and let sit in the fridge for at least 20 minutes.
- Use bamboo or metal skewers – alternating red onion, pineapple and tofu pieces
- Cook over medium heat in a cast iron pan for 5 minutes on each side.
