Despite this cake being the wrong side up, it’s so right. This may be my new go-to almond flour recipe, and you can bet I’ll be whipping this up for brunch, tea, and dessert for my friends and family (if you’re reading this, please visit!). This upside down orange almond cake uses nutty almond flour, with citrus zest and slices, making it basically a creamsicle cake. Plus, it’s passover friendly! When making this, I tested with both cane sugar AND Lakanto, a sugar substitute, and both were delicious. Whether or not you are gluten free, this cake is a WINNER.
It seems like just yesterday that gluten-free became a “thing”. Before then, it was a rare occurrence to meet someone who couldn’t eat gluten. And their options were slim to none – or dry, tasteless and full of funky ingredients. Nowadays, gluten-free is larger than life. It’s a whole category, and it seems like everyone and their mother is going “GF” just for the hell of it. Don’t get me wrong, I love gluten more than life itself, and I typically choose gluten-containing foods, UNLESS they are made with nutritious flours that pack in benefits of their own, like almond flour.
Almond flour is essentially very finely ground, skinned almonds. It can be a little expensive, so hit up your local costco if you have one. There are a TON of ways to use almond flour in recipes, note that it usually does require the help of an egg or two to keep moist and from falling apart. I love that almond flour is a source of protein, and healthy fats, meaning my baked goods may not spike my blood sugars as much as a GF baked good made using something like rice flour.
From almond flour banana bread, to cookies, there’s a million and one ways to use this nutty flour, but this upside down orange almond cake may be my favorite thus far.

Upside Down Orange Almond Cake

Serves: 8
Ingredients
- 2 oranges, thinly sliced
- 1/3 cup + 2 tsp sugar
- 4 eggs
- 2 tsp orange zest
- 1 tsp vanilla
- 2 tbsp melted coconut oil
- 2 cups almond flour
- 1 tsp baking powder
- 1/4 tsp sea salt
Instructions
- Preheat oven to 325F/163C. Line a small loaf pan with baking parchment paper.
- Line the bottom of the loaf pan with orange slices, until fully covered, you may need to cut some slices in half to line the corners. Sprinkle with 2 tsp sugar.
- In a medium bowl, whisk remaining sugar, eggs, orange zest, vanilla, and coconut oil until fully combined.
- Add almond flour, baking powder, and salt to egg mixture, stirring to combine.
- Pour batter overtop orange slices.
- Bake for 45-55 minutes or until a toothpick comes out clean.
- Let cool for 30 minutes, and invert onto a serving tray.
- Enjoy!
