Vegan Banana Pudding

Ingredients
Pudding:
- ½ cup canned coconut milk
- ½ cup cashews, soaked
- 3 tbsp maple syrup
- ½ banana
- 1 tsp vanilla extract
- ½ tbsp flaxseeds, ground
- 1 tsp chia seeds
- Pinch turmeric
- Pinch sea salt
- To assemble
- 1 ½ bananas, sliced
- 1 cup coconut yogurt, plain
- 12-16 vegan cookies or wafers
Preparation:
- In a high speed blender, combine coconut milk, cashews, syrup, banana, vanilla, flaxseeds, chia seeds, turmeric, and sea salt until smooth.
- Let sit for 5-10 minutes, or until thickened.
- Layer cookies, banana slices, yogurt and pudding in a glass.
- Let sit for 10-15 minutes, or until the cookies soften slightly.
- Enjoy!
