Vegan Funfetti Passover Coconut Macaroons

Ingredients
- 2 cups shredded coconut
- 1 cup slivered almonds
- ½ cup maple syrup
- 3 tbsp potato starch
- Optional: almond extract
- Pinch sea salt
- 1 cup white chocolate chips
- 1 cup sprinkles (kosher for passover, if needed)
Preparation:
- Preheat the oven to 350F. Grease a baking pan.
- Combine coconut, almond, maple and potato starch in a food processor until a rough dough forms. Add 1-2 tbsp water as needed. Add sea salt
- Scoop 1 ½ tbsp mixture into balls.
- Bake for 9-11 minutes or until golden.
- Dip into melted white chocolate and sprinkles, let sit.
- Enjoy!
