Did you grow up loving jalapeño poppers? Ya, me too. I remember snacking on them at my uncle’s house for the first time. Once i bit into that hot melty cheese, I knew I was in for trouble. I hadn’t had one in years, and one night dreamt of them (seriously). But as a lactose intolerant adult, I knew I had to make them in a way that I could eat them, a lot, all the time. So I made this east recipe for Vegan Jalapeño Bites – poppers, but better.
Game-day food has evolved in my life since marrying a Buffalonian. There’s no one who does tail gating better than Buffalo Bills fans (or so I’m told). Since I’ve become an honorary Buffalonian, I’ve been introduced to things I’d never imagined from buffalo wings, fried pickles, platters of nachos, coozie wrapped beers, and everything that makes my tummy hurt.
I’m all for eating game day food on game days, but truthfully, I’d rather make them a little better for you to eat them out of the stadium as well. From buffalo cauliflower or veggie burgers, I think I’ve exhausted the use of my buffalo sauce. So it’s time to foray into new waters, into these jalapeno poppers, and it’s been a great decision.
Creamy, a little spicy, and easy to make, these work best with a nut-based non dairy cheese, but let me know if you try it with anything else!
