Let’s face it, Passover Breakfasts leave a lot to be desired. From dusty, matzo-oh’s to matzo boards with schmear, I’m on a mission to upgrade your Passover morning meal.
Morning person or not, everyone loves breakfasts. Everyone loves breakfasts because breakfast food tastes great. It’s a universally proven fact of life.
That’s the exact reason why Matzo Brei’s one of my favorite Passover staples.

During Passover, Jews refrain from eating leavened foods like bread, which is why Matzo Brei’s such a big thing, especially for breakfast. You can make huge pancakes, make it scrambled, make it either sweet or savory- every family has their own favorite way. This recipe we’re making today tastes like the traditional version, just much more healthy and vegan-friendly.
Vegan Matzo Brei is healthier and tastes incredibly similar to the original. It’s made without eggs or dairy, but delicious nonetheless.
This Vegan Matzo Brei recipe is a Passover treat that everyone in your household will thank you for.
Vegan Matzo Brei

Serves 4
Ingredients:
- 4 boards Matzo
- ¾ cup unsweetened almond milk
- 2 tbsp flax seeds
- 2 tbsp chia seeds
- 2 bananas, mashed
- 2 tsp cinnamon
- ¼ cup shredded coconut
Preparation:
- Break the matzo boards into small pieces.
- Add almond milk, flax seeds, chia seeds, bananas, cinnamon, and coconut.
- Let sit for 10-15 minutes.
- Heat coconut oil or plant-based butter in a nonstick pan.
- Scoop ¼ cup of matzo mixture into the pan, and flatten with a spatula.
- Cook for 2-3 minutes on each side.
- Enjoy!
