VEGAN Vodka Baked Feta Pasta

It happened. I finally caved and whipped up that viral TikTok Feta Pasta… but with a twist inspired by Gigi Hadid’s Vodka Pasta (never did I think this day would come). I’ve been seeing that feta pasta all week, and with colder weather and feeling downright… down, I decided that my mood could only be lifted with carbs and vodka… hence my recipe for Vegan Baked “Feta” Vodka Pasta.

I’m using my favorite plant-based cheese, Miyokos Mozzarella in this creamy pasta recipe, but feel free to use a block of salty feta if you prefer!

 

 

This viral pasta recipe has been ruling my dreams. Don’t get me wrong, I love pasta, but I didn’t think I’d actually hop on the bandwagon. I’m a picky pasta eater don’t go for any old plate of noods. It has to be fresh, it has to be creamy and it has to be served in a bowl the size of my head. Plus, it doesn’t hurt if it has a splash of vodka to make it really feel like a party.

 

I chose to use a vegan cheese alternative, but truthfully, it’s mostly because I ran out of feta earlier this week (insert sad face here), and I’m too comfy in my PJ’s to pop out to the grocery store to grab more. Luckily, past me knew that I’d need a hunk of cheezy comfort and picked up a wheel of Miyokos (one of my fave brands) and I knew it would be the perfect way to get my fix of creamy, salty, bowl of comfort.

Vegan Vodka Baked Feta Pasta

Serves 6-8
Time: 45 minutes

Ingredients:

  • 1 pint cherry tomatoes
  • 1 block vegan mozzarella or feta
  • 2 sprigs rosemary
  • 1 tsp lemon zest
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 2 oz vodka
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper

Preparation:

  1. Preheat the oven to 375F.
  2. Add tomatoes, cheese, rosemary, lemon zest, and garlic to a 9×13 baking dish.
  3. Drizzle with oil and vodka. Season with salt and pepper.
  4. Bake for 35-45 minutes or until the tomatoes are cooked and the cheese is gooey.
  5. Stir, and add your favorite pasta to the dish.
  6. Enjoy!
